Blood orange
Laranja sanguínea in Portugal, arancia rossa in Italy, Blutorange in Germany. The red is anthocyanin, the same pigment as in blackberries and red cabbage, and an orange only makes it when it is chilled as it ripens. That is why the slopes under Etna grow them reliably and warm places struggle: the same tree after a mild winter gives a plain orange. Scientists found the switch and named the gene Ruby. A blush on the rind hints at the inside, but only hints; weight is the honest test. Simplest thing to do with it: slice it into rounds across the segments, then add olive oil and a pinch of salt.
